Vegetable Chow Mein Over Rice

 Whether you make your own or get take-out Chow Mein, preferably vegetable, you can enjoy it with rice. To make your own Chow Mein, choose the vegetables typically used for Chow Mein, such as celery, onions, cabbage and Bok Choy. Cook them in the microwave or steam until tender. Drain liquid and set aside. In a small bowl mix one cup water, 1 T soy sauce or Tamari, 1 tsp.sugar and 2 T corn starch. Stir well to blend. Place cooked vegetables in a large frying pan or wok, lightly grease with a paper towel to which just a tad of oil has been added. Stir over a high heat and pour in the corn starch mixture. Continue to toss the vegetables until a sauce begins to thicken and coats them. Remove from heat and enjoy over rice



 

 


Orzo and Avocado


 Mash a half avocado for one serving or a whole one for two servings. Toss into the cooked drained Orzo to coat well,. Top with grated Parmesan cheese (Or a vegan substitute) and enjoy.

Sesame Spaghetti with A Green Vegetable

 Whether gluten-free or regular pasta, this is a simple dish for a quick lunch or dinner. Toss cooked spaghetti with some soy sauce or Tamari sauce and a green vegetable. (In this pic, it's broccoli rabe.) Add some toasted sesame seeds and enjoy,
